Sunday baking: Chocolate-Coconut cupcakes
Preheat oven to 180 C (350 F). Place 250 g (8 oz) melted butter, 3/4 cup sifted cocoa powder, 1 1/3 cup sugar, 3 eggs, 1 1/2 cups unsweetened coconut, 1 1/2 cups flour, 1 1/2 teaspoons baking powder and 3/4 cup milk in a bowl and whisk until smooth. Pour into greased/lined 24 cm (9 1/2 inch) round cake tin or lined muffin tin. Bake for 50 minutes (20 minutes if cupcakes) or until skewer inserted into cupcake/cake comes out clean. Garnish as desired.
